Chick pea, green pea and pistachio couscous
This is a Moroccan inspired side dish that would go very well with grilled marinated meats or by itself. This dish can be eaten hot as a side or cold as a couscous salad. The spices and herbs provide a burst of interesting complimentary flavour and the chick peas and green peas add a nice fresh crunch.
Suggested Drink Pairing

juice of 1 large lemon
juice of 1 large orange          * The first three ingredients should =
1.5 cups chicken stock           roughly 2 cups
1.5 tsp cinnamon
1.5 tsp ground cumin
1.5 tsp caraway seeds
1.5 tsp red chilli flakes
4 cloves minced garlic
1/3 cup chopped fresh mint
1/3 cup chopped fresh parsley
1/3 cup chopped fresh cilantro
1/3 cup golden raisins
1/3 cup rough chopped pistachio nuts
1.5 cups frozen peas
1.5 cups chick peas
1.5 cups couscous (whole wheat if possible)
1/4 cup olive oil
1.5 Tbsp butter
salt and pepper to taste

Yield: about 6-8 cups

Note: Use a large pot here because this makes a lot but it is great for a couple of days as left overs.

The first thing to do with this recipe as with most recipes is to get your mise en place ready. The mise en place is a fancy cooking term that basically means getting all of your ingredients portioned, cut, and in bowls ready so when you start cooking you can assemble the dish fast.  It is especially important for dishes that have a lot of ingredients and that cook relatively quick once started.

Blanch your peas by dropping them in some boiling water for a minute or so and then cooling them down with cold ice water. You could also put the peas in the microwave and cook until done just before recipe asks you to add them to the couscous. (much easier way)

Use a large pot with lid. Over medium heat  sweat the garlic and chilli flakes in 1 Tbsp olive oil for about 1 minute or so and then add the cinnamon, cumin and caraway seeds. Sweat for an additional minute to get the aromatics released and then add the fruit juice and chicken stock. Bring to a boil.

Remove from the heat and add the couscous. Stir briefly and cover for 5 minutes.

Gently stir in the herbs, chick peas, green peas, raisins, nuts, butter, olive oil salt and pepper and cover for an additional 5 minutes for get the flavours mixed.
