What a fun meal to have. I think mussels are one of my favourite meals. I love the casual feel they give to a meal. This dish is very easy to make and perfect for a lazy summer day in the back yard with friends or a cold winters day cooped up in the house. Moules Frites or mussels and Fries are a very popular dish in Belgium, the Netherlands and France. The mussels and fries can be done any way you like as there are hundreds of ways to do mussels. I have done a little Thai flare here and am serving them with oven baked sweet potato fries. It looks like there are a lot of ingredients here but once you have them all measured out you just throw them together. This recipe is super easy to make and makes for a great presentation. Enjoy !
For the moules
2 lbs mussels fresh clean mussels
1 and 2/3 cups coconut milk
1 cup clam juice or fish stock
2 cloves minced garlic
1 tsp shredded ginger
1/2 tsp lemon zest
1/2 tsp lime zest
2 tsp yellow curry powder
2 Tbsp Thai red curry paste
9 dry curry leaves
1 Tbsp soy sauce
1 Tsp fish sauce
2 drops sesame oil
2 Tbsp brown sugar
1 tsp ground pepper
1/2 cup chopped green onions
1/4 cup chopped cilantro
1/4 cup chopped mint
For the Cajun mayo
3/4 cup mayonnaise
2 tbsp Cajun spice
The juice of one lime
4 drops Frank's hot sauce or 3 drops Tabasco
For the sweet potato frites
3 average sized sweet potatoes
2 tbsp canola oil
2 tbsp Cajun spice
For the moules
1. In 2tbsp canola oil sauté garlic, green onion, curry paste, curry powder for two minutes on medium heat.
2. Add the rest of the ingredients except the fresh herbs and cook on medium to medium high heat until the broth is 1/4 of its original volume.
3. Add mussels and cook with the lid on until all the mussels have opened. Serve the mussels in bowls with the fresh herbs sprinkled on top.
For the frites
1. Wash Cut your sweet potatoes into 1/4 inch fry wedges and place in a large bowl. Large enough to toss the fries.
2. Add the canola oil and toss the fries to evenly coat them with oil.
3. Add Cajun spice slowly while tossing the fries to evenly coat them.
4. Place your fries on a baking sheet so all of the fries are in contact with the sheet and not sitting on top of each other. If they are piled up you will steam your fries.
5. Bake in a 425 degree F oven for about 20 minutes flipping every 5 minutes until the fries are cooked throughout and golden brown.
6. While the fries are cooking add all the ingredients for the Cajun mayonnaise together, stir until well incorporated and refrigerate.
Now serve up your moules frites and enjoy!
Run your fresh mussels under cold water for a minute to clean them up and remove any of the beards
